Low-Carbs Gluten Free Kheer (keto friendly)

You don’t have to feel the guilty about eating sweet dish like Kheer (a traditional Indian sweet delicacy) any more!

I never thought I would be eating and making this India dessert so often. But now I do!!!

The original Kheer usually contains fresh milk and lot of sugar. It’s tasty, but has lots of carbs. It also makes my stomach bloats because of milk and high sugar content.

After experimenting a few times, I’ve come up with this Low-carbs gluten free Kheer recipe and happy to share with you all as per requests of some of friends and followers.

If you are health conscious and are looking for low-carbs desserts, this is one of them. I can say you won’t miss the original Kheer ever again! It’s so tasty and satisfying πŸ’•. It also has very low-carbs and loaded nutritious ingredients. Total amount of carbs is 15% or 50g for the whole pot of 10 – 12 serves.

Ingredients

  • 1 cup arrowroot flour
  • 1/2 cup almond flour
  • 1 tsp salt
  • 1 tsp finely crushed cardamom
  • 2 tbsp Ghee or coconut oil
  • 1/2 cup Almond flakes
  • 4 tbsp sweetener Stevia or Erythritol
  • 1 cup thickened cream
  • 200 ml hot water

Making Noodles

  • Shift 1/2 cup of arrowroot, 1/2 Almond flour and salt together into a mixing bowl. Add hot water slowly and use a spoon to mix them together while still very hot. Once it cools down a bit, use hands to knead the dough well. Then form the dough into a ball.
  • Sprinkle remain arrowroot flour on rolling board, then place a dough ball and sprinkle more arrowroot flour all over to prevent the dough from sticking to the board.
  • Once the dough is flattened to the thickness you prefer then cut it into noodles shape or any shape you like.
  • Boil 1.5 liter of water in a pot. Add handful of arrowroot noodles and bring it to boil. When noodles are cooked they will surface.
  • Add 2 liters of ice-water in a pot or big bowl.
  • Use a strainer to strain the noodles out from boiling pot into icy water and let them cool down. Then use strainer to remove noodles from icy water into another bowl and sprinkle with coconut oil or ghee to prevent noodles stick on each other.
  • Keep repeating the process till all noodles are cooked.

Making Kheer

  • Add cream, Stevia or Erythritol salt, with 1 liter of water and bring to boil. Add chopped almond nuts and crush cardamom, then let boil for 5 minutes.
  • Add noodles and bring to boil. Taste to your liking.
  • Remove Kheer from the heat and let it cool down.
  • Serve warm or cold with crushed pistachios.
